#RealMomMeals

I’ve decided to give you guys more of a real glimpse into our lives over here!  I always struggle to take as many pictures as I can while I’m cooking and I NEVER post them.  On top of juggling two very dependent children, rushing to get meals ready by a certain time and oftentimes screwing something up in the process, I still manage to feed my family 3 [mostly] nutritious meals a day.

Why am I not proud of that you ask? I have no idea lol! Maybe I am proud, just too exhausted to share with others.  Either way, it’s time to keep it all the way real.  I call these creations my #RealMomMeals. No fancy plates, no fancy garnishes, just good, fresh food with lots of love mixed inside!

So finally I’m ok with them not being picture perfect.  After-all, I’m not a chef… just a “Real” Mom who cares!

Are y’all’s husbands like mine? You know, hop out of the bed in the morning, throw on clothes, brush teeth, give the kids a fist bump, kiss you goodbye and walk out the door?!

This drives me nuts! Slightly because he can do all of that in 5 minutes and it takes me hours to get out the house, but moreso because he hasn’t eaten breakfast!!

Today we agreed that we would talk about his morning the night before and set a time that he needs to be gone.  Unfortunately, today I didn’t have that luxury. So while he was starting the car and gathering last minute things, I hurried and whipped something up…. In [5] minutes!!

That was a record for me.

It wasn’t fancy but it should have held him over until lunchtime. By the way, I didn’t get to send him with that either :-/

Beware, this has the veggie texture so if you don’t care for that, maybe juicing everything would be better.

So he had 2 eggs with cheese on this honey, 7 grain bread that I bought with a coupon 🙂 and a smoothie with most of the things listed above.  I didn’t perfect it until he left.  So his didn’t have any honey which means it might have been a little nasty lol.

Let’s pray that he drank it!

Overall, this was a super simple and fast breakfast that anyone can try.

Camden woke up this morning asking for pancakes and because I’m trying really hard to get back on track with healthier meals, I needed an alternative to the traditional mix.

Thankfully, I just downloaded Heather Lindsey’s app where I found tons of healthier recipes that look really tasty.  And if her hubby approves, I’m sure mine will too. They both have a thing for sugar and oatmeal raisin cookies lol.

So I especially love that she didn’t use any refined sugar in the recipe. Her pancakes were vegan and unfortunately mine were not because I cooked them in regular butter.

The original recipe was for Vanilla Banana Oatmeal pancakes but I didn’t have any banana so added 1 tsp. of baking powder, hoping that they would rise and not be super thin.  I didn’t have any syrup either 😦 but they usually eat whatever I cook so I rested in that and gave it a shot…

Here’s how it went…

  1. Gathered all of the ingredients: 1 cup of oats, 2 tbsp. of honey, 3 tbsp. of almond milk, 1 tsp. of vanilla, 1 tsp. of cinnamon, AND I added 1 tsp. of aluminum free/gluten free baking powder. Since I didn’t have bananas, I used apples for the topping.
  2. Mixed it all together in my food processor.
  3. Used the griddle to cook the pancakes and to saute the apples.
  4. Viola! Everything was done. If I didn’t have 2 little distractions, I probably could have gotten it done in 10-15 minutes.

I love all of my meals but breakfast is probably my favorite! Since it’s snowing in Atlanta, I didn’t even bother asking my husband to take a trip to the local Cracker Barrel.  I just decided to make them myself!

After a quick Google search, I stumbled upon this recipe and I’m so glad I did.  Of course I was missing the buttermilk from the list of ingredients but she even had a neat substitute!

I also wanted something to go along with them and I needed to put a few leftover potatoes to good use before spoiling.  So I made my version of home fries!!  I just peeled and cut one huge potato into small cubes.  Added salt, pepper, mushrooms, onions, and cheese! It was so simple. I remembering trying refrigerated hash browns before and my opinion, these were so much better!
