One day I think I’ll cook it without the beef, because Meatless Monday just sounds like a good idea!
Ingredients: (Everything’s estimated of course…)
A couple of cups of:
- Or any other random veggie that I have in the fridge
***I guess you could buy a bag of frozen veggies if you don’t want to wash, peel and chop.
-1 pack of meat for stew. I cut the pieces in half to make more…
-Dump meat in pressure cooker. I add a tad bit of olive oil in the pot.
-Press the meat option on the pressure cooker.
-When it’s done, I add all of the veggies, a couple of cups of water, and a pack of beef stew seasoning. But if I’ve forgotten the seasoning at the store, I’ll use this quick seasoning recipe.
-I cook brown rice separately.
I love using my pressure cooker for this! Everything is done in 30 minutes max!
And just like that, our whole dinner is ready in less than an hour!
