Vanilla Apple Oatmeal pancakes

Camden woke up this morning asking for pancakes and because I’m trying really hard to get back on track with healthier meals, I needed an alternative to the traditional mix.

Thankfully, I just downloaded Heather Lindsey’s app where I found tons of healthier recipes that look really tasty.  And if her hubby approves, I’m sure mine will too. They both have a thing for sugar and oatmeal raisin cookies lol.

So I especially love that she didn’t use any refined sugar in the recipe. Her pancakes were vegan and unfortunately mine were not because I cooked them in regular butter.

The original recipe was for Vanilla Banana Oatmeal pancakes but I didn’t have any banana so added 1 tsp. of baking powder, hoping that they would rise and not be super thin.  I didn’t have any syrup either 😦 but they usually eat whatever I cook so I rested in that and gave it a shot…

Here’s how it went…

  1. Gathered all of the ingredients: 1 cup of oats, 2 tbsp. of honey, 3 tbsp. of almond milk, 1 tsp. of vanilla, 1 tsp. of cinnamon, AND I added 1 tsp. of aluminum free/gluten free baking powder. Since I didn’t have bananas, I used apples for the topping.
  2. Mixed it all together in my food processor.
  3. Used the griddle to cook the pancakes and to saute the apples.
  4. Viola! Everything was done. If I didn’t have 2 little distractions, I probably could have gotten it done in 10-15 minutes.

They kinda looked like salmon croquettes to me lol

And there you have it, breakfast for 3!

I ‘think’ she liked it!

I know she liked Camden and every silly thing that he does!

Of course he liked it!

Download Heather’s app for vegan, vegetarian and other all around healthy recipes!! Search: Heather & Cornelius Lindsey: Today With the Lindsey’s or click here for Android and here for Apple.

That’s a wrap for this morning’s #RealMomMeal! Try it out and enjoy!
