Camden woke up this morning asking for pancakes and because I’m trying really hard to get back on track with healthier meals, I needed an alternative to the traditional mix.
Thankfully, I just downloaded Heather Lindsey’s app where I found tons of healthier recipes that look really tasty. And if her hubby approves, I’m sure mine will too. They both have a thing for sugar and oatmeal raisin cookies lol.
So I especially love that she didn’t use any refined sugar in the recipe. Her pancakes were vegan and unfortunately mine were not because I cooked them in regular butter.
The original recipe was for Vanilla Banana Oatmeal pancakes but I didn’t have any banana so added 1 tsp. of baking powder, hoping that they would rise and not be super thin. I didn’t have any syrup either 😦 but they usually eat whatever I cook so I rested in that and gave it a shot…
Here’s how it went…
- Gathered all of the ingredients: 1 cup of oats, 2 tbsp. of honey, 3 tbsp. of almond milk, 1 tsp. of vanilla, 1 tsp. of cinnamon, AND I added 1 tsp. of aluminum free/gluten free baking powder. Since I didn’t have bananas, I used apples for the topping.
- Mixed it all together in my food processor.
- Used the griddle to cook the pancakes and to saute the apples.
- Viola! Everything was done. If I didn’t have 2 little distractions, I probably could have gotten it done in 10-15 minutes.
